We’re opening a Korean Snackmart soon and in line with that I’m making a Korean bread series menu, so I tried baking Korean Garlic Cream Cheese buns. It’s all over FB for sometime now but when I try a recipe it just fails me, the dough, the filling and the topping, it was frustrating because cream cheese is not cheap at all! I didn’t want the sweetness to overwhelm the buns and forget about the garlic butter topping so I had to come up with my own take, according to the balanced taste I was trying to achieve. Now the buns is another story, different recipes use different doughs, this was a challenge for me too! Surprisingly, I just needed to stick to my most trusted dough recipe.
Then ECQ happened, same time last year we we’re on lockdown. All the preparations at the store was put to hault, with the extra time at home I was able to focus on practicing the buns and thought of making them smaller, mini version with less slices to make it more affordable. In 2 weeks time I was able to make and sell over a hundred buns. I learned what kind of flour is best in making the dough, what brand of flour yields and rises more to what brand of cream cheese is easier to cream and make it pipable, how I can achieve the garlic topping coat the bun perfectly while baking, I could go on and on but all I’m saying is, not because you nailed it the first time means you can put it out there for sale, it takes time to research, practice, product test and make different outcomes to create your end product.
I can’t wait to bake and have these available everyday at our store!
